Robinia pseudoacacia (Acacia) is native to central Europe and belongs to the Fabaceae or Leguminosae family. It is extremely clear, transparent and pale lemon yellow in colour. It has a delicate floral aroma, not very persistent, with mealy notes. It is sweet, very soft and round. Perfect with yoghurts, fromage frais and aromatic infusions such as camomile, pennyroyal and mint. Used in confectionery to add a delicate touch or as a sugar substitute.
