The Black Eucalyptus (Eucalyptus camaldulensis) comes from Andalusia and Extremadura and the White Eucalyptus (Eucalyptus globulus) from the Cantabrian coast. It has a clear amber colour, a floral aroma with a pronounced, very intense and very persistent woody component. Sweet on the palate with slightly acid and salty notes. Combines well with fish and white meat, as well as salads and some aromatic fruits such as peaches.
