It comes from the Mediterranean coast, Castile-La Mancha, Castile-Leon and Andalusia, and is very light in colour, almost white when crystallised. Its aroma is delicate, floral, not very intense and of variable persistence, sometimes with clear fruity notes. Sweet flavour, sometimes with slightly acidic notes. A delicate honey that goes well with infusions, soft drinks, yoghurts, fromage frais, fruit, fish and meat.
