Mediterranean mountains are covered with cork, holm and oak trees, and in the clearings with scrub, broom, heather and labiates such as rosemary and thyme. Amber to dark amber in colour. A floral aroma dominates. Its sweet flavour is softened by some salty notes. Like all dark honeys, it goes well with meats in moderation and added towards the end of cooking, as well as with nuts.
