It comes from all over the Iberian Peninsula, especially from the lower areas of the plateau. Its colour can vary from clear to dark amber. It has an intense and floral aroma. also used as a sweetener in a wide range of products, infusions, soft drinks, fruit juices and for dairy products, ice cream, fish and meat.
